Gluten Free Chickpea Flour Farinata

 

150g Get Farmed Chickpea Flour

5 tbsp extra virgin olive oil

300ml water

1 1/4 tsp salt

20 black olives, pitted and torn into halves

6 sprigs fresh rosemary

Freshly ground black pepper, to taste

 

Place the chickpea flour into a mixing bowl and slowly pour in 300ml water, whisking as you go.

Preheat your oven to its maximum temperature.

Use 1 tbsp of olive oil to grease the sides and base of a 30cmx22cm baking tray and place into the oven to heat up.

Whisk remaining 4 tbsp of olive oil into the flour mix, then add the salt and lots of freshly ground black pepper. You will have a thin batter mix.

Remove the hot baking tray from the oven, gently pour in the batter and top with the olive halves and fresh rosemary sprigs.

Turn down your oven to bake at 200°C for 25-30 minutes, until deeply golden.

Once cooked, remove the Farinata from the oven and allow to cool in the baking tray for 15 minutes before cutting into pieces and serving.
