Gluten Free Vegetable Pakoras

 

1 cup Get Farmed Gluten Free Chickpea Flour
2 cloves garlic, crushed
1 tsp salt
1/2 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp chili powder
1/2 tsp garam masala
3/4 cup water
Oil for deep frying
1 cup finely chopped broccoli
1 cup finely chopped sweet potato
1 cup finely chopped zucchini
1 cup finely chopped onion
2 medium onions, sliced into rings

 

Sift chickpea flour into a medium bowl; mix in garlic, salt, coriander, turmeric, chili powder, and garam masala. Make a well in the centre; gradually pour water into the well and mix to form a thick, smooth batter. Add vegetables and mix through to thoroughly coat the vegetables.

Heat oil in a large heavy-based saucepan over medium-high heat. 

Working in small batches, fry tablespoons of the battered vegetables in hot oil until golden brown, about 4 to 5 minutes. Drain on paper towels before serving with mixed pickles.
