Ginger Oat Muffins

 

1/2 cup brown sugar

2 tbsp coconut oil & extra for greasing pan

2 egg whites

3/4 cup plain greek yogurt

1 tsp ginger powder

3 tbsp water

1 tsp vanilla

1 cup plain flour

1/2 cup Get Farmed Porridge Oats

2 tsp baking powder

 

Preheat oven to 200°C.

Grease 6 muffin tins with a little coconut oil and line with baking paper.  

Mix together the brown sugar and coconut oil until crumbly. Add egg whites and beat until well combined.

Continue to beat while adding yoghurt, water, vanilla and ginger powder.

Combine flour, oats and baking powder and mix into wet mixture until just mixed through. 

Bake at 200°C for 15 minutes.

Muffins are cooked when they feel firm to the touch in the middle.
